Tonight’s Dinner: still battling flu and throat infection and feeling generally all round exhausted, I’m in need of a deep earthy immune boost. Dinner consists of Roast Vegie Tarts. Fresh organic roast beetroot, sweet potato, organic potato’s from my fathers garden, organic tomato, artichoke hearts, grilled peppercorns, organic zucchini, a ton of roast organic garlic, chucks of organic feta and grated organic caprakaas goats cheese. Sprinkled with organic pink sea salt and thyme and oregano from my garden. Yum!
